Ganzo is a Chinese brand that was founded 20 years ago and produces some of the highest quality knives at a lower price. I know what you are thinking. Chinese branded product tend not to last long, but the same cannot be said for Ganzo. They use high-quality materials to make their knives and handles.
They also sell products across their borders to other large countries which now gives them the status of an international company. Below, I have covered topics related to the type of metals used to make the blades and also the materials used for the handles. I have also included some of the blade types associated with these knives and the belt clips attached to the handles.
They are made from sturdy metal.
The most common type of steel that you will see throughout this review is the 440c stainless steel. It is very high in carbon which makes it harder than other 440 versions out there. To give you an example, it has around 0.95–1.20% carbon along with other elements as well. Some of the other elements are chromium, manganese, molybdenum and also silicon. This steel has a hardness rating of around 60 HRC.
High carbon content in steel makes it harder, but can also lead to rust. The added chromium inside this steel prevents it from rusting which makes a killer combo along with the carbon. This metal also gets extra hard once it is heat treated. This metal is not only used to make knives, but also other components such as ball bearings and chisels. Almost all of the knives in this review uses 440c stainless steel except for the Ganzo Firebird FH31 which uses d2 steel.
The d2 steel is very similar to the 440c regarding its carbon and chromium content. This steel is high in chromium alloy carbides which gives it extra strength. It contains carbon, manganese, silicon, chromium, molybdenum and also vanadium. This metal is best suited for smaller knives such as the Ganzo Firebird FH31.

Some knife manufacturers put most of their focus on the blade and skimp with the handle. Some of them forget that if the handle breaks, that the knife will be somewhat useless. There are two types of materials used to make Ganzo knives, and they include G10 material and carbon fiber.
- G10 Material. The main ingredient in this material is thin fiberglass sheets which comprise of thin strands. The multiple glass cloth layers of fiberglass cloth are then soaked in epoxy resin to bind. It is then treated with heat and pressure to give you the form you desire. This material offers electrical insulation and is tolerant of temperature and other chemicals. It is also water resistant which provides it with excellent anti-slip properties. It is also very lightweight.
- Carbon fiber. It can be referred to as thin strands (5–10 micrometers) of fiber which consists mostly of carbon atoms. What makes carbon fiber so attractive is that it is very strong and lightweight at the same time. You will notice that most aerospace companies will use these materials because of their little weight. Along with the strength, it is also tolerant of high and low temperatures. The Ganzo Firebird FH31 and Firebird F7563-CF use this material to make their handles.
They have a variety of blade shapes
Most people are not even familiar with the type of blade that is available online. The knives in this review fall into three blade type categories which include drop point, normal (straight) blade and also the sheep foot blade. Let’s start with the drop point.
- Normal (straight). This type of blade is what you will generally see with kitchen knives. The spine of the blade is straight right through from the base to the tip. The only part that curves is the cutting edge. The Ganzo G727M is very close to a straight blade as it only slightly bends but not enough to be classified as a drop point blade.
- Drop point. Instead of a straight spine, the spine of a drop point will curve down towards the tip of the blade. The spine is also where the blade is thickest and will center that strength to the middle of the blade. This type of blade makes stabbing through hard material easily because the point is centered and fortified with the spine. The Ganzo G704 and the Firebird F7563-CF are two great examples of drop point blades.
- Sheep foot blade. The type of blade is the complete opposite of the normal straight blade. The cutting edge will be straight while the spine of the blade will start to bend towards the tip. An example of this type of knife is a bread knife. Another example of this knife is the Ganzo Firebird FH31.
They come with belt clips
Another impressive feature to have are belt clips. You do not always want to carry your knife in your pocket. Sometimes it gets too bulky, or your knife will scratch the screen of your smartphone which is not desired.
